Still feeling the cold, I imagine..... Here is a great recipe to help you escape to warmer, more tropical times! Bake these, Turn on some Jimmy Buffett, and escape!
Pina Colada Cupcakes
1/3 cup Canola oil
1/4 cup water
1 can (8 oz) crushed Pineapple in juice, undrained (If you use fresh Pineapple, remember to allow the Pineapple to turn golden before cutting/crushing it, for greater sweetness! :)
1 teaspoon Coconut extract
1 teaspoon Rum extract
1 container of Lite Whipped Topping
3/4 cup shredded coconut , lightly toasted
1. Heat oven to 350°F. Place paper baking cup in each of 24 regular-size muffin cups. In large bowl, beat cake mix, oil, water, rum extract, coconut extract, if applicable, the pineapple and eggs with electric mixer on low speed 30 seconds. Beat on medium speed 2 minutes, scraping bowl occasionally. Divide batter evenly among muffin cups.
2. Bake until golden and toothpick inserted in center comes out clean. Cool 10 minutes; remove from pan to cooling rack. Cool completely - Important! .
3. Frost with Whipped topping. Sprinkle on lightly toasted and cooled coconut. Store in an air tight container in the refigerator. That is unless you wildly eat every last one the minute they are frosted!! :P
